All of my cutting boards and utensils are crafted from solid wood and left untreated, with wet sanding providing a smooth, polished feel. While applying a finish might seem practical for moisture and heat exposure, an unfinished surface is actually more beneficial. Wood's natural ability to absorb moisture makes it antimicrobial, drawing in both moisture and bacteria until the surface dries. Although bacteria inside the wood aren’t immediately killed, they don’t resurface, and proper drying is essential to prevent fungi growth. Finishes block this natural absorption, trapping bacteria in knife cuts, causing permanent stains, and reducing the wood’s ability to neutralize bacteria.
Washing an unfinished board with or without soap effectively removes surface contaminants, as water is the primary driver to pull them into the wood. Thorough drying between uses eliminates the need for separate boards for foods such as strawberries and raw chicken, but for occasional deeper sanitation, microwaving the board for up to 30 seconds can be effective.
My other products are finished to suit their specific functions: candle holders, serving trays, bottle openers, and more are finished with Clapham’s beeswax for a smooth, pleasing feel. My unfinished cutting boards allow the wood to naturally self-regulate moisture, enhancing its qualities and durability over time. Plus, the grain of my cutting boards illuminates when wet, making cleanup after cooking an enjoyable experience!
